Job Description
The Project Manager will lead daily operations of a designated catering unit, ensuring alignment with sector strategies and compliance with all contractual and regulatory standards. This includes managing food production, menu standardization, budgeting, customer experience, and health and safety processes. The role is suited for candidates with hospital catering experience and a strong background in hospitality or food services.
The ideal candidate will be able to manage budgets and drive profitability, supervise staff effectively, and ensure high-quality food service delivery. Experience in project management and implementing change within commercial hospitality environments is highly desirable.
Duties, Roles and Responsibilities
Oversee daily operations of the catering unit in accordance with sector strategies and contractual requirements
Implement and supervise the food production process
Deliver excellent quality service to clients
Plan, standardize, and cost menus
Monitor kitchen operations to ensure adherence to recipes and food quality standards
Manage food gross profit in line with budget targets
Control unit budgets and meet financial targets
Implement stock controls to manage inventory efficiently
Ensure all Health, Safety, and Environmental (HSE) records are maintained and up to date
Handle staff management including workforce planning, leave tracking, payroll, and performance reviews
Enhance the customer experience by analyzing survey data and improving service delivery
Ensure strict adherence to Service Level Agreements (SLAs)
Qualifications, Education and Competencies
Education and Experience:
Relevant tertiary qualification in hospitality, food and beverage services, or culinary arts preferred
Minimum 5 years’ experience in hospital catering is essential
Experience in commercial and sensitive markets is mandatory
Project management experience in hospitality/catering is advantageous
Background in unit mobilization and change implementation preferred
Strong financial background with experience in costing, forecasting, and invoicing
Valid driver’s license required
Skills and Competencies:
Deep understanding of the catering environment and South African food industry laws
Strong customer service and communication skills
Leadership and team management capabilities
Proven ability to manage and improve profitability
Skilled in organizing and executing creative events/functions
Financial acumen including budgeting and cost-saving strategies
Proficiency in generating and analyzing reports
