Job Description
Reporting to the Production Supervisor, the Bakery Machine Operator interprets work orders, sets up and runs process-control equipment, regulates time/speed/temperature, and troubleshoots stoppages to minimise downtime. The role monitors product quality, records production data, manages raw-material usage, and coordinates with Maintenance for repairs and servicing. The operator enforces GMP and PPE requirements, maintains line cleanliness, supports safety inspections, and contributes to continuous improvement through data analysis and efficiency initiatives. The position also trains new operators and maintains accurate shift documentation and reports.
Duties, Roles and Responsibilities
Machine Operation: Set up lines from work orders; feed materials; run ovens/conveyors; adjust baking parameters; clear blockages; keep activity logs.
Quality Control: Inspect in-process/output; adjust settings to standard; resolve quality issues; comply with QA procedures and GMP.
Material Management: Monitor and account for raw-material usage against production plans.
Equipment & Maintenance: Observe equipment performance; report faults; liaise with Maintenance for servicing/repairs.
Food Safety & EHS: Enforce GMP/PPE; keep machines/work areas clean; support audits and corrective actions.
Training & Development: Onboard and coach new operators; promote skills development and SOP adherence.
Continuous Improvement: Analyse production data; recommend process/throughput/energy-use improvements.
Reporting: Maintain accurate shift logs and prepare production reports for supervision/management.
Qualifications, Education and Competencies
Diploma or Degree in Mechanical, Electrical, or Mechatronics Engineering.
2+ years’ experience operating bakery/food-processing or similar industrial machinery.
Exposure to bread-industry equipment and PLC-controlled systems.
Computer literate (basic production reporting/data entry).
Strong troubleshooting, attention to detail, and adherence to SOPs/GMP.
Good communication, teamwork, and safety mindset; able to work shifts as needed.
