Job Description
Job Title: Quality Assurance Officer
Organisation: Ruko Establishments Milk Factory
Duty Station: Kiruhura, Uganda
Reports to: Quality Assurance Manager
Job Summary: The Quality Assurance Officer is responsible for implementing and monitoring quality control and food safety procedures throughout the milk processing plant from milk reception to finished product storage and dispatch. This role ensures that all operations comply with company standards, regulatory requirements, and good manufacturing practices (GMP). The Quality Assurance Officer performs regular inspections, laboratory testing, and documentation to maintain high product quality, hygiene, and safety standards.
Duties, Roles and Responsibilities
Quality Control and Inspection
Conduct routine quality checks on raw milk, in-process materials, and finished dairy products.
Carry out laboratory tests for microbiological, chemical, and physical parameters to verify compliance with specifications.
Inspect milk reception, processing, packaging, and warehousing areas to ensure adherence to hygiene and food safety standards.
Record and report any deviations or non-conformities to the Quality Assurance Manager for corrective action.
Food Safety and Compliance
Implement and follow quality and food safety systems such as HACCP, ISO 22000, and UNBS standards.
Ensure proper handling, sampling, and documentation of all quality control activities.
Participate in internal audits and assist in preparing for external inspections or certifications.
Support enforcement of hygiene, sanitation, and pest control programs throughout the factory.
Process Monitoring and Data Recording
Monitor critical control points (CCPs) during milk processing and packaging.
Collect, analyze, and record data on product quality and processing conditions.
Maintain updated quality records, including test results, checklists, and incident reports.
Assist in identifying trends or recurring issues and recommend preventive measures.
Support for Continuous Improvement
Work with production and engineering teams to correct quality deviations.
Suggest practical improvements to reduce product defects and minimize rework or waste.
Participate in training sessions on food safety, hygiene, and quality management practices.
Finished Products and Warehouse Quality Control
Inspect finished goods before release to ensure they meet labelling, packaging, and quality standards.
Monitor product storage conditions to maintain product integrity and shelf life.
Check packaging materials and warehouse hygiene for compliance with GMP requirements.
Qualifications, Education and Competencies
Bachelor’s Degree or Diploma in Food Science, Dairy Technology, Food Quality Management, or a related field.
2–3 years of experience in quality assurance, quality control, or laboratory testing within a dairy or food manufacturing environment.
Familiarity with milk testing procedures, HACCP principles, and GMP implementation.
Knowledge, Skills, and Abilities
Sound knowledge of food safety and quality assurance principles.
Basic laboratory testing and data recording skills.
Strong attention to detail and adherence to procedures.
Good communication and teamwork abilities.
Proficiency in Microsoft Excel, Word, and basic data entry systems.
Willingness to work shifts, weekends, and in cold environments when required.
Key Performance Indicators (KPIs)
Product quality compliance rate
Number of non-conformities detected and resolved
Timeliness and accuracy of quality reporting
Raw milk acceptance/rejection rate
Hygiene and sanitation audit scores
Compliance with HACCP and ISO procedures
