Job Description
The Junior Sous Chef, Pastry plays a central role in managing the pastry section of the kitchen, working closely with the Executive Chef and broader kitchen staff. The role involves monitoring food preparation and quality, controlling costs through portioning and yield testing, and developing new pastry items. This position supports effective teamwork, kitchen hygiene compliance, guest satisfaction, and culinary excellence. The role requires mentoring junior team members, participating in training and meetings, and promoting a strong work culture. It also involves collaboration with colleagues across departments and adapting to operational changes.
Duties, Roles and Responsibilities
Guest & Client Relations
Deliver Hyatt’s brand promise and ensure exceptional guest service.
Handle guest and internal complaints courteously and effectively.
Financial
Improve productivity through multi-tasking and flexible scheduling.
Control utility and payroll costs and optimize use of kitchen equipment.
Embrace technology to boost kitchen productivity.
Operational
Maintain brand and hygiene standards in pastry operations.
Source and manage fresh, local ingredients.
Oversee food inventory, purchasing, and mise-en-place for all pastry kitchens.
Conduct yield testing and minimize food wastage.
Innovate new pastry recipes and coordinate their implementation.
Monitor portioning and food preparation methods for consistency and cost control.
Collaborate with Hygiene Manager to maintain kitchen sanitation standards.
Respond to operational feedback and implement necessary changes.
Employee Handling
Maintain professional relationships with all team members.
Ensure clear and effective communication with other departments.
Foster mentorship and support among pastry staff.
Promote safety standards and positive workplace culture.
Resolve team conflicts and encourage feedback and knowledge sharing.
Act on Colleague Experience Survey results.
Administrative
Support alignment with corporate culinary strategies.
Assist in updating departmental manuals and conducting team briefings.
General Duties
Adhere to hotel rules, particularly regarding safety, hygiene, and technology use.
Attend training and contribute to team and cross-functional meetings.
Represent the hotel positively in professional settings.
Maintain a high standard of grooming and presentation.
Be flexible and responsive to changing hotel and departmental needs.
Perform other reasonable duties as assigned by managers.
Executive Duties
Supervise pastry employees with hands-on leadership.
Coordinate supplies and preparation across all pastry stations.
Conduct briefings and support kitchen communication in the absence of the Executive Chef.
Qualifications, Education and Competencies
Culinary Degree or Diploma
Valid Food Safety Certification
Proven experience in a pastry kitchen environment
Strong understanding of pastry techniques, recipe development, and cost control
Excellent leadership, teamwork, and communication skills
High standards of hygiene and food safety
Adaptability, creativity, and attention to detail
