Job Description
As a Production Assistant in the fish processing unit, you will support the end-to-end production cycle—from receiving raw fish to dispatching packaged products. You will supervise casual staff, ensure high hygiene standards, monitor equipment, manage inventory, and help maintain a clean and safe facility. The role requires operational knowledge of fish processing machinery, excellent communication skills, and the ability to work in a fast-paced environment. Adherence to food safety regulations and cold chain management procedures is essential for this position.
Duties, Roles and Responsibilities
Supervise and guide casual staff on hygiene and PPE usage.
Assist in cleaning, gutting, scaling, filleting, and packaging of fish.
Operate fish processing machinery safely and efficiently.
Inspect fish products to meet quality and safety standards.
Prepare and submit production and post-production reports.
Verify dispatch orders, package products, and maintain dispatch records.
Inspect cleanliness of units and check vehicle temperatures.
Maintain high hygiene and sanitation standards throughout the facility.
Record inventory transactions and assist in loading/unloading stock.
Conduct weekly physical stock takes and cold room stock management.
Monitor facility cleanliness and manage processing equipment.
Implement FIFO in cold room operations and track product traceability.
Provide cross-functional support to other production areas.
Adhere to food safety and workplace health regulations.
Administer basic first aid when required.
Qualifications, Education and Competencies
Bachelor's Degree, Diploma, or equivalent in a relevant field.
Previous experience in manufacturing or food processing is an added advantage.
Strong knowledge of hygiene, sanitation, and safety standards.
Ability to operate fish processing equipment and cold room systems.
Good organizational and communication skills.
Physically fit and able to work in cold environments.
Team player with attention to detail.
Willingness to follow instructions and adapt to dynamic workflows.
