Job Description
The Food Experience Manager is responsible for leading and supporting the culinary teams in Kenyan camps, developing and implementing annual food strategies in collaboration with the Group Food Experience Manager. This role ensures continual improvement of products and services, adherence to quality standards, guest dietary needs, and sustainability goals. The manager oversees budgets, staff training, food waste reduction initiatives, supplier relations, recruitment, and camp audits. They foster career development and mentorship, maintain communication across operations, and champion Wilderness’s brand values.
Duties, Roles and Responsibilities
Develop and implement an annual Food Strategy for Kenyan camps with the Group Food Experience Manager
Create and update Product Improvement Plans reflecting industry trends and guest feedback
Manage and guide Food Experience teams to meet Key Result Areas (KRAs) and performance goals
Monitor guest feedback and implement corrective training or procedural changes
Ensure training materials reflect current policies and standards
Ensure availability of special dietary menus including vegetarian, vegan, gluten-free, lactose-free, dairy-free, and nut-free options
Train culinary teams on managing special dietary needs and preventing cross-contamination
Define, monitor, and review food budgets, purchasing, and stock management per camp
Implement food waste reduction programs and train staff on sustainability practices
Drive staff retention through career development, mentorship, and recognition programs
Launch and manage a structured internship program in partnership with educational institutions
Justify and secure training budgets by demonstrating their value to the business
Lead by example in promoting Wilderness values and environmental commitments
Identify and mentor high-potential staff members
Participate in external trainer visits and travel to camps as needed
Conduct employee assessments and assist with onboarding
Maintain strong communication with trainers and operations departments for aligned efforts
Manage menu maintenance, recipe folders, par stock sheets, supplier relations, and food audits
Recruit senior food team members including executive chefs and trainers
Oversee the management of the central training kitchen where applicable
Produce monthly reports and participate in feedback meetings with Group Food Experience Manager
Ensure compliance with group environmental standards in all camps
Qualifications, Education and Competencies
National Diploma in Culinary Arts, Hospitality Management, or equivalent
Minimum of 5 years’ experience in the hospitality industry
Experience with international guests and seasoned travelers preferred
Proficiency in MS Office suite
Excellent interpersonal and communication skills
Strong team management and leadership abilities
Keen attention to detail
High energy and enthusiasm for enhancing guest experiences
Commitment to staff development and motivation
Ability to manage budgets and meet targets
